Ingredients

1 ½ cups sunflower seeds

½ cup desiccated coconut

½ cup almond meal

1 cup chopped Medjool dates

¼ cup coconut oil, melted

2 Tbsp water

1–2 tsp matcha powder (to taste)

½ cup pistachios, roughly chopped

Matcha powder, for dusting
Method

Add sunflower seeds, almond meal, and coconut to a food processor. Pulse until finely combined.

Add chopped dates, coconut oil, water, and matcha powder. Blend until sticky and cohesive.

Transfer mixture to a bowl and stir in Strawberry Matcha Luxury Bark cut into small chunks and chopped pistachios.

Roll 1 Tbsp portions into balls (makes about 16).

Dust lightly with matcha powder. Refrigerate 30 minutes to set.

Store in an airtight container in the fridge for up to 1 week, or freeze for up to 2 months.
