Strawberry Matcha Latte Bliss Balls

Ingredients

  • 1 ½ cups sunflower seeds

  • ½ cup desiccated coconut

  • ½ cup almond meal

  • 1 cup chopped Medjool dates

  • ¼ cup coconut oil, melted

  • 2 Tbsp water

  • 1–2 tsp matcha powder (to taste)

  • ½ bag of Strawberry Matcha Luxury Bark

  • ½ cup pistachios, roughly chopped

  • Matcha powder, for dusting

Method

  1. Add sunflower seeds, almond meal, and coconut to a food processor. Pulse until finely combined.

  2. Add chopped dates, coconut oil, water, and matcha powder. Blend until sticky and cohesive.

  3. Transfer mixture to a bowl and stir in Strawberry Matcha Luxury Bark cut into small chunks and chopped pistachios.

  4. Roll 1 Tbsp portions into balls (makes about 16).

  5. Dust lightly with matcha powder. Refrigerate 30 minutes to set.

  6. Store in an airtight container in the fridge for up to 1 week, or freeze for up to 2 months.
